WINTER SALAD

 


I've been in hyper-healthy mode a little recently, and that means a lot of substitution of things like my usual carbs-based lunch for something that is a lot more nutritios but still filling. The other week I threw this salad together with what I had lying around in the kitchen and it worked out rather nicely, if I do say so myself. I tweeted a picture and you guys agreed that I should do a recipe post about it, so here it is!

Now, a little disclaimer here about healthy eating: I'm not into dieting and the word 'diet' alone makes me cringe. In my opinion (and I'm certainly no nutritionist), as long as you have everything in moderation and make healthier substitutions every now and then, you're going see the benefits it has on your health. 

I love this because it's a salad that fills me up without using any meat or carbs. The cheese is really good at filling you up, but the pomegranate and beetroot keep it really fresh. I've chosen low fat feta because I prefer the taste, it's much more mild than full fat feta. The beetroot and pomegranate not only look gorgeous next to the white of the cheese, but they taste amazing together as well. I adore the combination of colours.

Ingredients:
A good handful of spinach leaves
1 cooked beetroot
A handful of pomegranate seeds
75g feta cheese
2 tbsp olive oil
2 tsp white wine vinegar or lemon juice
1 tsp honey

After you've thrown the spinach, pomegranate seeds, beetroot and cheese into a dish, you need to make the dressing. All you do is mix the oil, vinegar or lemon juice, and honey, with about 2 table spoons of juice from the beetroot and pomegranate.
