CRANBERRY GRANOLA RECIPE

We're half way through January, your new year's resolutions are taking a turn for the worst, and you're losing all inspiration to stick to them. This week, my mission is to bring back some of that inspiration back. One of the best ways to revive yourself is to 'eat better, sleep better'. And so I thought I'd share with you one of my favourite recipes. It's fun and easy to make, and it really makes me feel good about myself. I love a good granola, and have it on yoghurt most mornings for breakfast. So enjoy!

Ingredients //
100g rolled oats
20g sesame seeds
20g pecans
20g hazelnuts
20g whole almonds
20g flaked/sliced almonds
25g sugar
40g apple sauce
30g golden syrup (or more maple syrup)
1 tsp cinnamon
1 tbsp maple syup (or more golden syrup)
1 tbsp sunflower oil
g dried cranberries (or sultanas)

*A lot of the ingredients can be swapped and changed, but as long as you have oats, dried fruit, nuts, sugar (and a syrup or honey) and some oil, you can add or take out whatever you want.*

Method //
Preheat the oven to 170C and line a baking tray with grease proof paper. Mix all ingredients (apart from the fruit) in a large bowl until it is all combined. Tip the mixture onto the tray and bake for minutes, stirring thoroughly half way through. Allow the mixture to cool completely, and add the dried fruit. Break it up if it has stuck together, and put into an airtight container or jar.

Add to yoghurt or simply pour milk on top - delicious!

Don't give up on those resolutions just yet!
